Flaky Flounder Quiche with Roasted Peppers

Start your feast with a rich and creamy quiche featuring tender flounder and the sweetness of roasted peppers. It’s elegant yet comfortingly familiar.

Whisk together 4 beaten eggs, 100ml each of heavy cream and coconut milk, chopped roasted peppers, and a pinch of salt and white pepper. Pour half into a homemade pie crust, layer with 180g of flounder strips, and cover with the rest of the mixture. Bake at 375°F (190°C) for about 30 minutes, until set and golden. Let it cool slightly before slicing into wedges.

Rub a whole chicken with a blend of 250g softened butter, 20g fresh thyme, 20g minced garlic, salt, pepper, and optional paprika—don’t forget under the skin. Roast at 390°F (200°C) for 45-50 minutes. Meanwhile, simmer a glaze of tangerine juice, maple syrup, mustard, and zest until thick. Baste the bird every 10-15 minutes for a lacquered finish.
